Oggi voglio condividere con voi una ricetta speciale che mi ricorda l’infanzia. Se chiudo gli occhi, riesco ancora a vedere mia nonna e a sentire il profumo e il sapore di quei panini morbidissimi farciti con prosciutto cotto o nutella, che mi preparava per la merenda. Sono consapevole che lo strutto non sia la cosa più salutare, ma può facilmente essere sostituito da burro o olio (ahimè a scapito del sapore).
Today I want to share with you a special recipe that reminds me of childhood. If I close my eyes, I can still see my grandmother, smell the scent and feel the flavor of those very soft buns stuffed with cooked ham or Nutella, she prepared me for a snack. I am aware that lard is not the healthiest thing, but it can easily be replaced by butter or oil (alas at the expense of flavor).

500 g FARINA MANITOBA
250 ml LATTE
25 g LIEVITO DI BIRRA o 10 g LIEVITO disidratato
90 g ZUCCHERO
6 g SALE
50 g STRUTTO
1 UOVO MEDIO
40 ml LATTE (per spennellare la superficie)
Versare 250 ml di latte nel boccale . 2 min 37° vel.2
Aggiungere 25 g di lievito di birra o 10 g di lievito disidratato. 2 min 37° vel.2
Aggiungere 90 g di zucchero. 1 min vel.3
Aggiungere 500 g di farina manitoba e 1 uovo. 1 min vel.4
Nel frattempo, dividere 50 g di strutto in 3-4 parti.
Aggiungere 6 g di sale. 4 min.
Subito dopo aver avviato l’impasto, con le lame in movimento, togliere il misurino e aggiungere lo strutto precedentemente diviso, una parte per volta, permettendogli di essere assorbito, prima di aggiungere il pezzo successivo.
Al termine dei 4 min togliere l’impasto dal boccale , formando un panetto tondo. Mettere il panetto in una grande ciotola unta.
Lasciar riposare per 60 min dentro al forno con la luce accesa (coperto da un canovaccio umido) e mettere una ciotola con acqua calda alla base del forno per mantenere l’ambiente umido.
Riprendere il panetto, schiacciarlo delicatamente con le mani allargandolo e piegarlo a tre per tre volte.
Coprire, rimettere nel forno con la luce accesa e far riposare per 20 min.
Dividere il panetto in circa 25 parti uguali, formando palline di 3-4 cm di diametro e tirando delicatamente la pasta verso l’interno (con lo stesso procedimento della Pizza Napoletana).
Mettere le palline ben distanziate in una teglia con carta forno (calcolate una distanza tra l’una e l’altra di almeno 6 cm), coprire con un panno umido e mettere in forno con la luce accesa per 60 min.
Togliere dal forno la ciotola con l’acqua e la teglia con i panini.
Preriscaldare il forno a 180°.
Spennellare i panini con un po’ di latte.
Infornare in forno statico a 180° per 20 min.
Potete farcirli a vostro piacimento con salumi, nutella o marmellata. In estate dovete assolutamente provarli con la granita siciliana. Non ve ne pentirete!
È possibile conservare i panini in una busta ermetica per un paio di giorni (manterranno la loro morbidezza) o congelarli.

Pour 250 ml of milk into the mixing bowl . 2 min 37 ° speed 2
Add 25 g of brewer’s yeast or 10 g of dehydrated yeast. 2 min 37 ° speed 2
Add 90 g of sugar. 1 min speed 3
Add 500 g of bread flour and 1 egg. 1 min speed 4
Meanwhile, divide 50 g of lard into 3-4 parts.
Add 6 g of salt. 4 min. Immediately after starting the dough, with the blades in motion, remove the measuring cup and add the previously divided lard, one part at a time, allowing it to be absorbed, before adding the next piece.
At the end of 4 minutes, remove the dough from the mixing bowl , forming a round dough.
Place the dough in a large greased bowl.
Let it rest for 60 minutes inside the oven with the light on (covered with a damp cloth) and place a bowl with hot water at the base of the oven to keep the environment moist.
Take the dough back, gently squeeze it with your hands, spreading it out and folding it with three folds three times.
Cover, put back in the oven with the light on and let it rest for 20 min.
Divide the dough into about 25 equal parts, forming balls of 3 cm in diameter each and gently pulling the dough inwards (with the same procedure as the Neapolitan Pizza).
Place the balls in a well-spaced baking tray with parchment paper (calculate a distance between one and the other of at least 6 cm), cover with a damp cloth and put in the oven with the light on for 60 min.
Remove the bowl with the water from the oven and the pan with the soft buns.
Preheat the oven to 180°
Brush the soft buns with the milk.
Bake in a static oven at 180° for 20 min.
You can fill them to your liking with ham, salami, mortadella, cheese, nutella or jam. In summer you must absolutely try them with Sicilian granita. You will not regret it!
You can keep the soft buns in an airtight bag for a couple of days (they will keep their softness) or freeze them.
