Oggi voglio condividere con voi un favoloso impasto per pizza che ho scoperto dopo aver provato e modificato diverse ricette più o meno note.
La cosa fantastica di questo impasto è la sua somiglianza alla classica pizza napoletana con cornicione alto, nonostante sia fatta con un normalissimo forno di casa.

The fantastic thing about this dough is its similarity to the classic Neapolitan pizza with a high cornice, despite being made with a normal home oven.

BASE
500 GR FARINA MANITOBA
10 GR LIEVITO DI BIRRA FRESCO
300 GR ACQUA
10 GR SALE
CONDIMENTO
250 GR PASSATA DI POMODORO
2 FOGLIE DI BASILICO
400 GR MOZZARELLA
OLIO E.V.O. Q.B.
ZUCCHERO Q.B.
SALE Q.B.
Prendere due ciotole.
Ciotola 1: pesare 300 gr di Farina Manitoba e 10 gr di Sale. Mescolarli e tenerli da parte.
Ciotola 2: pesare 200 gr di Farina Manitoba.
Versare nel boccale 300 gr di acqua e 10 gr di lievito di birra fresco.
Sciogliere 2 min 37° vel. 1.
Avviare l’impasto 10 min. senza il misurino e dal foro del coperchio aggiungere poco per volta il contenuto della ciotola 2 (farina senza sale).
Aggiungere poco per volta anche il contenuto della ciotola 1 (farina+sale).
Alla fine dei 10 minuti, lasciare riposare per 2 min.
Impastare 2 min.
Coprire il boccale con un canovaccio e metterlo in un luogo caldo per la prima lievitazione di 2 ore.
A questo punto l’impasto dovrebbe essere lievitato arrivando fino al livello del coperchio.
Impastare 1 min.
Togliere l’impasto dal assicurandosi di avere le mani ben infarinate e cercare di compattarlo dando una forma tondeggiante.
Aiutandosi con la punta delle dita, tirare dolcemente l’impasto verso l’alto e con i pollici spingerlo e inglobarlo all’interno dell’impasto stesso. Ripetere questo procedimento per un paio di minuti.
Poggiare su un foglio di carta forno ben infarinato, spolverare un po’ di farina sull’impasto, coprire e lasciar riposare 2 ore in un luogo caldo.
Dividere l’impasto in 3 panetti da circa 260 gr ciascuno e ripetere il passaggio precedente, cercando di dare una forma tondeggiante ai panetti.
Infarinare bene ciascun panetto e poggiarli su un foglio di carta forno ben distanziati tra loro.
Coprirli e lasciarli riposare per 6 ore in un luogo caldo per l’ultima lievitazione.
Nel frattempo possiamo preparare il condimento, che ovviamente potrà essere a vostro piacimento. In questo caso, io ho preparato tre pizze margherita.
In una ciotola, versare la passata di pomodoro. Aggiungere un filo d’olio E.V.O., un po’ di sale e due cucchiaini di zucchero (per togliere l’acidità al pomodoro).
Per quanto riguarda la mozzarella, possiamo scegliere se tagliarla a listarelle (in questo caso non si scioglierà del tutto) o tritarla (in questo caso si scioglierà completamente e si distribuirà omogeneamente sulla pizza).
Se scegliete di tritarla, potete metterla nel boccale 5 sec. vel. 7.
Prendere il primo panetto (mai dal bordo!!!), sollevandolo leggermente da sotto il bordo e afferrandolo dal centro, fargli fare un veloce “bagno di farina” e poggiarlo su un piano infarinato.
Stendendo l’impasto con i polpastrelli, dobbiamo fare in modo di spostare l’anidride carbonica (formatasi durante la lievitazione) verso il bordo senza mai toccarlo, in modo che questa gonfi l’impasto, creando un gustosissimo cornicione.
Formato un disco da circa 30 cm, spesso circa 5 mm al centro e circa 1,5 – 2 cm ai bordi, possiamo passare alla fase di cottura.
Preriscaldare il forno a 250°.
Sul piano cottura, preriscaldare una padella (meglio in ghisa o pietra) a fiamma alta.
Prendere (sempre internamente al cornicione) la base della pizza e stenderla sulla padella rovente.
Dopo 4-5 minuti, controllarla nella parte inferiore. A questo punto dovrebbe essere dorata e croccante.
Togliere la base dalla padella e poggiarla sulla carta forno. Aggiungere la passata di pomodoro precedentemente condita e con un cucchiaio spalmarla dentro il cornicione dal centro verso l’esterno. Aggiungere, quindi, la mozzarella e qualche foglia di basilico.
Accendere il grill del forno e infornare la pizza nel ripiano più alto per circa 5 minuti.
I forni sono tutti diversi tra loro, quindi, soprattutto le prime volte, controllate i tempi.
Potete mangiarla subito o condirla e congelarla all’interno di buste singole. quando ne avrete voglia, pre-riscaldate il forno a 250°, quindi passare a grill. Infornare la pizza prendendola direttamente dal congelatore. Dopo circa 8-10 min (quando sarà dorata), sfornarla.

500 GR BREAD FLOUR (MANITOBA)
10 GR FRESH BREWER’S YEAST
300 GR WATER
10 GR SALT
TOPPING
400 GR MOZZARELLA CHEESE
250 GR TOMATO SAUCE
EXTRA-VIRGIN OLIVE OIL Q.S.

Take two bowls.
Bowl 1: weigh 300 gr of bread flour and 10 gr of salt. Mix them and keep them aside.
Bowl 2: weigh 200 gr of bread flour.
Pour 300 g of water and 10 g of fresh brewer’s yeast into the mixing bowl .
Dissolve 2 min 37 ° speed 1.
Start kneading 10 min. dough mode without the measuring cup and from the hole in the lid add the contents of bowl 2 a little at a time (flour without salt).
Add the contents of bowl 1 a little at a time (flour + salt).
At the end of the 10 minutes, let stand for 2 min.
Knead 2 min.
Cover the mug with a cloth and put it in a warm place for the first leavening of 2 hours.
At this point the dough should have risen up to the level of the lid.
Knead 1 min.
Remove the dough from the making sure that your hands are well floured and try to give it a rounded shape.
With the help of your fingertips, gently pull the dough from the bottom and with your thumbs push it and incorporate it inside the dough itself. Repeat this process for a couple of minutes.
Place it on a well floured sheet of parchment paper, sprinkle a little flour on the dough, cover and leave to rest for 2 hours in a warm place.
Divide the dough into 3 loaves of approximately 260 gr each and repeat the previous step, trying to give the loaves a rounded shape.
Flour each dough well and place it on a sheet of parchment paper well spaced apart.
Cover them and let them rest for 6 hours in a warm place for the last leavening.
In the meantime, we can prepare the dressing, which obviously can be at your convenience. In this case, I have prepared three margherita pizzas.
In a bowl, pour the tomato sauce. Add a drizzle of extra virgin olive oil, a little salt and two teaspoons of sugar (to remove the acidity from the tomato).
As for mozzarella cheese, we can choose whether to cut it into strips (in this case it will not completely melt) or chop it (in this case it will completely melt and distribute evenly on the pizza).
If you choose to chop it, you can put it in the 5 sec. vel. 7.
Take the first loaf (never from the edge!!!), lifting it slightly from the edge and grasping it from the center, make it take a quick “flour bath” and place it on a floured surface.
Using your fingertips, we must push the dough from the center to the edge, being careful never to touch the latter. By spreading it, we must make sure to move the carbon dioxide formed during the leavening, towards the edge, so that it inflates the dough, creating a very tasty cornice.
Once a 30 cm disc is formed, about 5 mm thick in the center and about 1.5 – 2 cm at the edges, we can move on to the cooking phase.
Preheat the oven to 250°. On the hob, preheat a pan (preferably cast iron or stone) over high heat. Take (always inside the cornice) the base of the pizza and spread it on the hot pan.
After 4-5 minutes, check it at the bottom. At this point it should be golden and crunchy. Remove the base from the pan and place it on parchment paper.
Add the previously seasoned tomato puree to the center, and with a spoon spread it up inside the cornice from the center outwards. Then add the mozzarella cheese and some basil leaves.
Turn on the oven grill and put the pizza on the top shelf for about 5 minutes.
The ovens are all different from each other, therefore, especially the first few times, check the cooking time.
